Is My Blog Burning? - The Holiday Cookie Swap
I knew as soon as Jennifer announced this month's IMBB topic that I wanted to participate.
Cookies? I'm a big fan!
I chose a cookie recipe from Martha Stewart's Everyday Foods. It actually came with my renewal notice. Good marketing, I say.
I actually made two batches and learned a valuable lesson: When a recipe says BUTTER, do not think Crisco is a good substitution... especially if butter is the main ingredient.
So the first batch, with Crisco, was nasty. They tasted artificial and like plastic. They didn't melt down flat and gave me a stomach ache after sampling 2.
The ones with butter are pictured above and were so tasty. Crispy and chewy at the same time and deliciously buttery.
A few notes:
1. Parchment paper is fairly essential for this recipe.
2. The recipe says it makes 24, but I only got 16 cookies out of it without making the cookies smaller than a quarter.
3. The cookies store for up to one week in an airtight container at room temperature, but good luck getting them to last that long!
Oatmeal Crisps
Makes 24 Prep Time: 10 minutes Total Time: 25 minutes
4T softened unsalted butter
3T sugar
2T all purpose flour
1T vanilla
1/4t salt
2/3c rolled oats
1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper. In a medium bowl, mix butter, sugar, flour, vanilla and salt until smooth. Mix in oats.
2. Drop firmly packed teaspoons of dough, 2 inches apart, onto baking sheets. Bake until golden, rotating sheets halfway through, 12-15 minutes. Cool on sheet 1 minute; with a very thin metal spatula, transfer to paper towels to cool completely.

Stella, these cookies look and sound amazing! Trust Martha to have such a great recipe...and um, no Crisco is NOT a butter substitute, silly girl. Glad you tried the recipe a second time.
