There are some days when I just need something sweet. Wait. EVERYday I need something sweet! But on a busy work day, when there is nothing sweet to be found in the pantry, I usually pull down my trusty red and white checkered Better Homes & Garden Cook Book. My mom bought me this book when I left for college. She always knew I enjoyed cooking and this was a great basic cookbook (with great photos!) for me to learn the basics. It is usually the first cookbook I reach for when looking for a recipe. I like to check out the desserts and try to match a recipe with the ingredients I know I have on hand. For this recipe, I knew I had about a cup of milk that I could use before it turned.
That was my goal... find something sweet that included milk as one of the ingredients.
Enter Busy Day Cake.
Though I wasn't in any particular hurry, I did like the dump and mix aspect of this recipe. Once it was cooled, I thought of 3 different ways to serve the cake. The first is sprinkled with cinnamon and sugar, the second is drizzled with a little hershey's syrup (always in the fridge!) and the third is simply with blueberries and raspberries. The dense spongy texture of the cake is chewy and solid and held up well with all the different garnishes. It would even be great with frosting, but I was too impatient to whip that up.
Busy Day Cake
1 1/3 c flour
2/3 c sugar
2 t baking powder
2/3 c mik
1/4 c butter (softened)
1 egg
1 t vanilla
In a bowl, combine flour, sugar and baking powder. Add milk, butter, egg and vanilla. Beat with an electric mixer on low speed until combined. Beat on medium speed for 1 minuite. Pour batter into a greased and floured 9 inch round baking pan. Bake in a 350 degree oven for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on rack for 5 minutes. Remove from pan. Garish as desired.

Hey! That cake looks really familiar. It looks like a 1:1:1 cake I used to make as a kid. I remember that it used equal weights of flour, sugar, and butter. Yours comes pretty close to those weights too.
I remember one of my favorite ways to eat that cake was pouring honey and lemon over it. Delish!

hurray! my mother got that jr. cookbook when she was younger and so she still has it... i've been looking for this recipe while she's away.
i've made it with honey and walnuts on top, with dried apricots in it, butterscotch chips were good... just about anything tasty can be put in it! *eat*
