Easiest Soup in the WHOLE WIDE WORLD!

Three ingredients:
1 box low sodium, organic chicken broth
1 package fresh tortellini- I used cheese (usually found in the deli or refrigerator section at the grocery)
1 head Escarole

Put the broth in a medium sized dutch oven and heat it up on medium. Chop and clean escarole by rinsing in cool water and leaving it to stand in a bowl of clean water so the dirt can be drawn out and fall to the bottom of the bowl. Once broth is brought to a boil, add tortellini and cook 3-4 minutes or until they start to float. Add clean escarole and heat until wilted. I added an additional 2 cups of water plus salt and pepper to taste.  Do not bring this to a hard boil or the tortellini will break open and you will have cheese or other filling floating in your soup. (it's still tasty, but not as pretty.)

This soup seriously took less time than opening a can of Campbells and heating it in the microwave. It also lasted for a week and was great with crusty bread as well as crunchy breadsticks.

Could you use baby spinach instead of escarole?

Sure, Jumper. Any of your favorite leafy greens would work!
