Sour Cream Pancakes

H and I dog-sat over the weekend. We got to stay at his friend's place and I made use of their amazing kitchen. Herein lies the issue: it was Sunday morning and the fridge was bare! While H was in the shower, I took a quick glance at the contents of the cupboard and fridge. I wanted to surprise him with breakfast without having to leave the house! I spotted: 1 egg, flour, sugar, vanilla, cottage cheese and sour cream. I knew I had the basic ingredients for pancakes of some kind, I just wasn't sure how to pull them all together to make them taste good!

Enter Go*gle.

I searched sour cream pancakes, cottage cheese pancakes and just plain ole American pancakes. The biggest hurdle was that we did not have milk and we only had 1 egg. Many of the recipes called for 2 or more eggs and over a cup of milk!  Finally I found a recipe that included sour cream but asked for 2 eggs. I knew there was a way to substitute an egg in a recipe and another Go*gle search granted me the answer.

Here is the recipe I followed for Stella's Sunday Morning Sour Cream Pancakes:
1 cup flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs (I used 1 egg and the following egg substitute: 2 Tbs. water |1 Tbs. oil | ½ tsp. baking powder)
1/2 cup sour cream
1/2 cup water
1/2 tsp. vanilla
2 tablespoons butter, melted

Combine flour, sugar, baking powder, baking soda, and salt in large bowl. Combine eggs, sour cream, water, and vanilla in medium bowl. Whisk in melted butter. Pour wet ingredients into dry ingredients. Stir until moistened.

Preheat griddle skillet over medium heat; grease lightly. Pour about 1/4 cup butter onto hot griddle for each pancake. Cook until tops of pancakes are bubbly; turn and cook until browned.

These light fluffy pancakes were a hit! We had just enough maple syrup for H to use. I opted for raspberry jam to top my pancakes.

The batter yeilded 16 medium sized pancakes (easier for flipping) and I discovered that I am in desperate need of a griddle pan! I have added one to my Christmas list and hopefully Santa thinks I am good enough to deserve one this year! :)

Great recipe! Followed it to the "T" Turned out fantastic- i don't want to make regular pancakes anymore!
